- Bring coconut milk beverage and lime juice to a boil in large saucepan. Stir in rice and coconut pudding mix; bring back to a boil. Reduce heat to low. Let simmer, stirring occasionally, until mixture thickens and rice is very tender, 12 to 15 minutes.
- Scoop 125 mL rice mixture into each serving dish. Serve warm or chill completely to serve.
