In large saucepan, heat 2% milk until steaming.
Meanwhile, in large bowl, whisk together coconut milk and pudding mix. Whisk into hot milk and cook over medium heat, stirring constantly, until bubbles break the surface.
Whisk in eggs until combined. Stir in rice and raisins and cook for 2 minutes. Remove from heat and let stand, covered, for 10 minutes.
Pour into 25 – ½-cup (125 mL) serving dishes. Garnish with a sprinkle of coconut. Serve warm or chilled.
