Ingredients

750 mLFresh strawberries, finely chopped or mashed
100 mLGranulated sugar
50 mLFreshly squeezed lemon juice
30 mLVanilla extract
500 mLHeavy or whipping (35%) cream
20 gDr. Oetker Whip It, Stabilizer for Whipping Cream
540 gWellcare Instant Strawberry Mousse Mix
1.75 LCold 2% milk
500 mL2% plain Greek yogurt
32Small fresh whole strawberries
32 (15 g)Mini shortbread cookies

Directions

  • In large bowl, stir together chopped strawberries, sugar, lemon juice and vanilla. Refrigerate until ready to use.
  • To medium bowl, add cream. Stir in cream stabilizer. Using handheld electric mixer on high speed, beat until stiff peaks form. Refrigerate until ready to use.
  • To large bowl, add mousse mix. Add milk. Using handheld electric mixer with clean beaters on low speed, beat for 1 minute or until smooth. Scrape down sides and bottom of bowl. Beat on high speed for 6 to 8 minutes. Fold in chopped strawberry mixture and yogurt until blended. Fold in whipped cream.
  • Spoon 125 mL strawberry fool mixture into 32 serving cups. Refrigerate for 2 to 3 hours or until well chilled and slightly set, and flavors are married. Garnish each with 1 whole strawberry and 1 cookie.
