Product description
A silky and tangy lemon pie filling that can be added to pre-baked pie shells and topped with meringue, whipped cream or fresh fruit.
Preparation
- Lightly beat 10 egg yolks using a whisk or beater.
- Gradually blend in 700 mL cold water, stir.
- Add 1 kg (full bag) Cooked Pudding and Pie Filling Mix and whisk until smooth.
- Stir this mixture into 2 L rapidly boiling water in steam-jacketed kettle and mix well.
- Cook over medium heat, stirring continuously.
- When bubbles first break the surface, continue to boil and stir for 30 seconds.
- Remove from heat. Cool slightly.
- Pour into individual dishes or cool baked pie shells.
- Product will continue to thicken as it cools. Refrigerate unused portions.
