Ingredients

Lime Jelly:
8¾ oz (~ 1½ cups)Dr. Oetker Lime Jelly Powder
2 Tbsplime zest
⅓ cupfresh lime juice
¾ cupboiling water (for blooming the jelly)
Margarita Pudding:
5 cupscold 2% milk
8¾ oz (~ 1½ cups)Dr. Oetker Vanilla Instant Pudding Mix
10½ oz (~ 2 cups)Dr. Oetker Lime Professional Bar Mix
Garnish:
¼ cupslime juice
½ cupgraham wafer crumbs
25lime wedges

Directions

1. Prepare Lime Jelly

In a large bowl, whisk Lime Jelly Powder with ¾ cup boiling water until fully dissolved.

Stir in lime zest and ⅓ cup lime juice.

Set aside and allow to cool to room temperature.

2. Prepare Margarita Pudding

Pour 5 cups cold milk into a large mixing bowl.

Using an electric mixer on low speed, blend in prepared pudding mix for about 1 minute.

Scrape down the sides and bottom of the bowl.

Continue mixing on low speed for 3–5 minutes, until smooth.

Add the cooled lime jelly mixture and mix another 3–5 minutes until fully incorporated.

Refrigerate until slightly firm, 10–15 minutes.

3. Garnish & Assemble

Pour ¼ cup lime juice into a shallow dish and graham crumbs into another.

Dip the rims of clear serving cups into lime juice, then into graham crumbs to coat.

Portion ½ cup Mock Margarita Pudding into each prepared cup.

Garnish each serving with one lime wedge.
