Ingredients

120 mLButter
1.5 LApples, cored, peeled and diced
125 mLBrown sugar
10 mLGround cinnamon
1.5 LWater
500 gWellcare Instant Vanilla Pudding Mix
2.5 LCold 2% milk
500 mLApplesauce
500 mLOatmeal cookies, crumbled, divided
500 mLWhipped topping

Directions

  • In large high-sided skillet set over medium heat, melt butter. Add apples and cook, stirring occasionally, for 8 to 10 minutes or until starting to soften. Stir in brown sugar and cinnamon. Cook, stirring occasionally, for 5 to 8 minutes or until sugar has been incorporated. Stir in water, cover and cook, stirring occasionally, for 1 hour or until apples are very tender and syrup has formed.
  • Meanwhile, to large bowl, add pudding mix. Add milk. Using electric mixer on low speed, beat for 1 minute or until smooth. Scrape down sides and bottom of bowl. Beat on low speed for 5 to 7 minutes. Refrigerate until ready to assemble parfaits.
  • Spoon 65 mL pudding into 32 serving cups. Layer 15 mL applesauce, 15 mL apples mixture and 15 mL crumbled cookies over top. Garnish with 15 mL dollop whipped topping.
