- In small saucepan set over medium heat, combine orange juice, lemon juice and sugar; bring to boil. Cook for 1 to 2 minutes or until sugar dissolves. Remove from heat; let cool completely.
- Stir together rosé wine and citrus syrup. Stir in sparkling soda water. Refrigerate until ready to use.
- Add 2 raspberries and 3 strawberry slices to eight (200 mL) wine glasses. Refrigerate until ready to use.
- Soften 8 gelatin sheets in cold water for 5 minutes. Remove from water and drain.
- In small saucepan over low heat, gently stir softened gelatin sheets until completely dissolved.
- Stir dissolved gelatin into half of the wine mixture. Transfer to metal bowl set over larger bowl of ice water. Stir frequently until mixture starts to thicken slightly but is still pourable. Pour over fruit in prepared wine glasses. Refrigerate until set. Top with remaining fruit. Refrigerate until ready to pour the next layer.
- Soften remaining 8 gelatin sheets in cold water for 5 minutes. Remove from water and drain.
- In small saucepan set over low heat, gently stir softened gelatin sheets until completely dissolved.
- Stir dissolved gelatin into remaining wine mixture. Transfer to metal bowl set over larger bowl of ice water. Stir frequently until slightly thickened but still pourable. Pour into prepared wine glasses. Refrigerate for 4 to 6 hours or until completely set.
- Assembly: Garnish each wine jelly with mint sprig before serving.
