- Hollandaise Sauce: In large saucepan set over medium heat, stir Hollandaise Sauce Mix into 1 cup cold water; bring to boil, stirring frequently. Reduce heat; cover and simmer for 2 to 3 minutes, stirring occasionally. Mix in butter until smooth; let cool.
- In large bowl, combine shrimp, red pepper, celery, green onion and cilantro.
- In separate bowl, combine ½ cup prepared Hollandaise Sauce, lime zest and hot sauce; toss with shrimp mixture. Season with salt and pepper.
- Fill each roll with ½ cup shrimp mixture.
Chef’s Tip: Substitute lobster for shrimp if desired.
